Cinnamon Sopapilla Cheesecake = Yummy!

I wanted to find a "mexican" themed dessert to go w/cilantro chicken. I googled "mexican desserts" and several variations of sopapilla cheesecake appeared. I decided to give it a shot and I tried the recipe below last night for recipe club. It was so yummy and was so easy to make! I could have eaten half of the pan, but I decided my thighs would never forgive me.

It makes a whole 9x13 pan, so it can probably feed 12 people (or more)!

Cinnamon Sopapilla Cheesecake

Ingredients:
3 (8 ounce) packages cream cheese, softened
1 1/2 cups white sugar
1 1/2 teaspoons vanilla extract
2 (8 ounce) cans crescent roll dough

1/2 cup melted butter
1/2 cup white sugar
1 teaspoon ground cinnamon
1/4 cup sliced almonds (I left these out)

1. Preheat an oven to 350 degrees F (175 degrees C).
2. Beat the cream cheese with 1 1/2 cups of sugar, and the vanilla extract in a bowl until smooth. Unroll the cans of crescent roll dough, and use a rolling pin to shape the each piece into 9x13 inch rectangles. Press one piece into the bottom of a 9x13 inch baking dish. Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough.
3. Drizzle the melted butter evenly over the top of the cheesecake. Stir the remaining 1/2 cup of sugar together with the cinnamon in a small bowl, and sprinkle over the cheesecake along with the almonds.
4. Bake in the preheated oven until the crescent dough has puffed and turned golden brown, about 45 minutes. Cool completely in the pan before cutting into squares.

Giddy Up

Happy Friday, Y'all!

Everybody wants to be a Chi Omega...

Last May when Andy and I were in Dallas for a Wedding, my friend and sorority sister, Kim, asked me if I could turn her old Chi-O shirts in to a T-Shirt Quilt. I had done it once for my own Chi-O shirts, but I'm certainly no expert. Well, 8 months later it is finally finished!! A big thank you to my mama, who got me a sewing machine for Christmas (so i could actually do the project). Here are a few pictures of the work in progress: And the final product:
Warning: Don't look too close, it certainly isn't perfect (which kills the little perfectionist in me). But it was fun to make (minus a few frustrating moments) and its "really-super" soft as my nephew, Trevor, would say. I hope you like it, Kim!!

What Am I Doing?

First of all, Welcome to our blog! Thanks for stopping by.

Secondly, let me confess that I'm not quite sure yet what I'm going to do with this thing. I do know that I spend quite a bit of time "blog-stalking"...you know, kinda like "facebook-stalking"... so I thought I might as well start one of my own.

What will I write about? I'm not sure. Today i'm obessed with my new sewing maching, so I'll probably write about my attempt to be a master seamstress for a while. I'm also quite a fan of baking, cooking, being a decorating wanna be, and also learning about new things (hence learning how to blog...html?what?). If nothing else, it will be fun to document our little lives and look back and laugh someday!

And, hey, if nothing else, maybe it will inspire me to be a little more interesting and to take more pictures!

So here's to a new year and a new blog!
